Asian Noodle Soup

Soup is a great way to warm up and lose weight!  Studies show people who eat foods high in water content consume fewer calories.

4  Green onions, thinly sliced

6  Cloves garlic, thinly sliced

1/4 c  Peeled and thinly sliced fresh ginger

3 c  Water

2-14 oz  Cans reduced sodium chicken broth

4 oz  Fresh gourmet mushroom blend, rinsed

16 oz pkg  Frozen egg noodles

1-14 oz  Can baby corn, drained and rinsed

In a large saucepan, combine green onions, garlic, ginger and 3 c water.  Bring to a boil over high heat.  Reduce to a simmer; partially cover, and cook 10 minutes.  Add chicken broth and mushrooms, cook about 3 minutes.  Add frozen noodles and baby corn and boil until the noodles are tender, about 4 minutes.  Serve hot.

Serves 4.  Per approximate 2 c serving:  253 calories, 4 g fat, 1 g saturated fat, 41 mg cholesterol, 503 mg sodium, 43 g carbohydrate, 8 g fiber, 13 g protein.
