Avocado BLT

A new way to get some avocado (and its monounsaturated fat!) in your diet

4 slices  Turkey bacon

8 slices  Whole grain reduced calorie bread, toasted

2 T  Low fat mayonnaise

1 c  Mixed salad greens

optional   Red onion slices

1 large  Tomato, sliced

1 large  Ripe avocado, peeled, pitted and sliced

1/4 c  Cilantro leaves

Prepare bacon, crisp.  Spread mayonnaise on toasted bread.  Assemble 4 sandwiches with a layer of bacon, greens, red onion if using, tomato, avocado slices and cilantro.  Slice and serve immediately.

Serves 4.  Per serving:  226 calories, 10 g fat, 2 g saturated fat, 12 mg cholesterol, 555 mg sodium, 32 g carbohydrate, 10 g fiber, 8 g protein.
