Baked Salmon Dijon

This is a delicious recipe adapted from the National Heart, Lung and Blood Institute

1 c  Low fat sour cream

2 tsp  Dried dill

3 T  Scallions, finely chopped

2 T  Dijon mustard

2 T  Lemon juice

1 1/2 lb Salmon fillet with skin

1/2 tsp  Garlic powder

1/2 tsp  Black pepper

Preheat oven to 400 degrees.  Whisk sour cream, dill, scallions, mustard and lemon juice in a small bowl to blend.  Lightly spray baking sheet with cooking spray.  Place salmon, skin side down on sheet.  Sprinkle with garlic powder and pepper, then spread with the sauce.  Bake about 20 minutes, until an internal temperature of 145 degrees is reached.

Serves 6.  Per 3 oz cooked portion:  268 calories, 16 g fat, 4 g saturated fat, 80 mg cholesterol, 209 mg sodium, 3 g carbohydrate, 0 g fiber, 25 g protein.
