Barbecue Burger Casserole

A delicious casserole sure to please after any fall event!

3/4 c Dry egg noodles

1 lb Extra lean ground turkey

1 Small onion, chopped

1/3 c Barbecue sauce

1/3 c Ketchup

2 tsp Mustard

1/2 tsp Pepper

4 oz Fat-free cream cheese, softened

4 oz Fat-free sour cream

1/2 c Chopped green onions

4 oz Low fat shredded cheddar cheese

Cook egg noodles according to package directions.  Meanwhile, spray skillet with nonstick spray.  Brown ground turkey and onions until turkey is no longer pink.  Add barbecue sauce, ketchup, mustard, and pepper.  Bring to a boil; cover, reduce heat and simmer for 10 minutes, stirring once.  Combine cream cheese and sour cream, stirring until smooth.  Stir in green onions and cooked noodles.  Layer half the noodle mixture in a greased 8x8-inch microwave safe baking dish.  Top with half the meat mixture.  Sprinkle with half the cheese. Top with half remaining noodle mixture, then remaining meat.  Microwave about 8-10 minutes.  Top with remaining cheese, microwave until melted.

Serves 6.  Per approximate 1 cup serving:  315 calories, 12 g fat, 4 g saturated fat, 112 mg cholesterol, 819 mg sodium, 28 g carbohydrate, 1 g fiber, 26 g protein.
