Basil and Garlic Chicken Marsala Over Rice

Happy New Year!  This year, why not try a new recipe each week to vary your menus?  Here's a new one to start you out!

2 T Flour

1 1/2 tsp Dried basil

1 1/2 tsp Garlic powder

1/4 tsp Salt

1 lb Boneless, skinless chicken breasts, thinly sliced horizontally

1 T Butter

3/4 c Sliced mushrooms

1/2 c Chicken broth

1/2 c Sherry cooking wine

4 c Cooked Basmati rice

Mix flour, garlic powder and salt on a large plate.  Moisten chicken lightly with water.  Coat evenly with flour mixture.  Melt butter in a large nonstick skillet on medium heat.  Add chicken, cook 6-8 minutes or until almost cooked through, turning once.  Remove from skillet; keep warm.  Add mushrooms; cook and stir 2 minutes.  Stir in chicken broth and cooking wine.  Cook and stir 3 minutes longer.  Return the chicken to skillet.  Cook 1-2 minutes or until completely cooked.  Serve over rice.

Serves 4.  Per serving:  372 calories,7 g fat, 3g saturated fat, 88 mg cholesterol, 555 mg sodium, 39 g carbohydrate, 1 g fiber.
