Chicken Capellini

Need something to do with all those tomatoes???  Here it is, you will love it!

8 oz Spaghetti

12 oz Boneless, skinless chicken breasts

1  .6oz pkg dry Zesty Italian salad dressing mix

2 T Red wine vinegar

3 T Olive oil, divided

2 T Water

4-5 Tomatoes, diced

1 tsp Minced garlic

1 T Fresh basil, minced or 1 tsp dried basil

Grated parmesan cheese

Preheat grill or broiler.  Cook spaghetti according to package directions.  Combine salad dressing mix, red wine vinegar, 2 T olive oil and water.  Pour over chicken breasts.  Set aside.  In another bowl, combine diced tomatoes, garlic, 1 T olive oil and basil.  Grill or broil chicken breasts until internal temperature of 165 degrees F is reached, slice into thin strips.  Warm tomato mixture in the microwave.  Serve chicken and tomato mixture over a bed of spaghetti.  Top with grated parmesan cheese.
