Crepes

This is a delicious light meal, that can be filled with sweet or savory ingredient-from fruit to creamed chicken...

Using whole grain white flour gives the benefit of whole grain, with the consistency of white flour.

1 1/2 c Whole grain white flour

1 T Sugar

1/2 tsp Baking powder

1/2 tsp Salt

2 c Skim milk

2 Eggs

2 T Margarine, melted

1/2 tsp Vanilla

Mix flour, sugar, baking powder and salt.  Stir in remaining ingredients.  Beat with hand beater until smooth.   Lightly grease 6 to 8 inch round skillet.  Pour scant 1/4 cup of the batter into skillet; immediately rotate skillet until thin film covers bottom.  Cook until light brown.  Run spatula around edge to loosen; turn and cook other side until light brown. Stack crepes, placing wax paper between each.  Keep covered.

Spread a thin coat of applesauce, berries, jam or jelly or creamed chicken, asparagus, etc. on warm crepes.  Roll up.

Makes 12 crepes.  Per crêpe (without filling):  105 calories, 3 g fat, 36 mg cholesterol, 168 mg sodium, 15 g carbohydrate, .5 g fiber, 4 g protein.
