Italian Beef Kabobs

Something a little different that everyone will love!

1 lb Boneless beef top sirloin steak, cut 1-inch thick

4 Small new potatoes (about 1/2 lb) cut into quarters

1 Medium red bell pepper, cut into 1-inch pieces

1 Small onion, cut into 1-inch pieces

1/2 c  Fat free Italian salad dressing

8 Kabob skewers

Preheat grill or  broiler.  Place potatoes in 8x8 inch microwave safe dish; cover with vented plastic wrap.  Microwave 7-9 minutes or until just tender, stirring once.  Cool slightly.  Cut beef into 1 1/4-inch pieces.  Combine beef, potatoes, bell pepper and onion in large bowl.  Drizzle with salad dressing, toss to coat.  Alternately thread beef and vegetables onto eight skewers.  Place kabobs on grill or in broiler.  Cook about 10 minutes, turning occasionally.

Makes 4 servings.  Per serving (2 skewers):  351 calories, 12 g fat, 4 g saturated fat, 112 mg cholesterol, 521 mg sodium, 18 g carbohydrate, 2 g fiber, 39 g protein.
