1/4 c  Extra virgin olive oil

Juice of 2 lemons

Place grain and spice packet from Taboule mixes in medium bowl.  Add 2 cups boiling water.  Stir in lemon juice and refrigerate.  While cooling, dice and chop vegetables.  Place the grain mixture in the bottom of a clear glass serving bowl.  Tap the salad down in the bowl so that it is level.  Next add the red onion in an even layer.  Layer the tomatoes on top of the onion, followed by the cucumber, pepper, cheese, chicken and parsley.  It is important to keep the layers separate so that you create an attractive salad.  Drizzle the olive oil over the parsley and then drizzle the lemon juice over.  Serve.  May be made ahead, covered and refrigerated for up to 2 days.
