Lime and Garlic Steak Fajitas

A change of pace with steak and a touch of lime!

2 tsp Olive oil, divided

1 Green pepper, cut into strips

1 Red pepper, cut into strips

1 Medium onion, peeled and sliced

1 lb Beef sirloin steak, cut into strips

1 T Lime juice

1 tsp Minced garlic

8 Fat free, whole grain tortillas (8")

Condiments, as desired:  salsa, low-fat shredded cheese, low-fat sour cream

Heat 1 tsp oil in skillet.  Stir fry vegetables until crisp tender.  Remove; set aside.  Pour in remaining oil; stir-fry sirloin strips, lime juice and garlic until done, about 6-7 minutes.  Return vegetables, warm through.  Spoon mixture down center of tortilla.  Add condiments, as desired.  Fold tortilla.

Makes 8 fajitas.  Per fajita (without condiments):  162 calories, 4 g fat, 1 g saturated fat, 35 mg cholesterol, 214 mg sodium, 16 g carbohydrate, 10 g fiber, 15 g protein.
