Lime Chicken with Honeydew-Peach Salsa Make this refreshing dish with some of those fabulous summer fruits! 1 Lime (1 1/2 tsp peel, 2 T juice) 2 c Honeydew melon , peeled and cut into 1/4-inch cubes 2 c Ripe peach, pitted and cut into 1/4-in cubes 1/2 c Loosely packed fresh basil leaves, coarsely chopped 4 Medium skinless, boneless chicken breast halves, flattened to uniform thickness (1 1/4 lb) 1/4 tsp Salt 1/4-1/2 tsp Black peppe4 Preheat grill or broiler. To prepare salsa, combine fresh lime juice, diced melon, diced peach and chopped basil. Set aside. (This may be done ahead and refrigerated, if desired). Sprinkle chicken on both sides with lime peel, 1/4 tsp salt, and pepper. Place chicken on hot grill or in broiler. Cook 10-12 minutes, or until meat thermometer reads 165 degrees, turning once. Serve with salsa. Serves 4. Per serving (chicken breast with 1 cup salsa): 240 calories, 5 g fat, 1 g saturated fat, 99 mg cholesterol, 263 mg sodium, 19 g carbohydrate, 2 g fiber, 31 g protein.
