Low Fat Chicken Fettuccine
A low fat creamy fettuccine??? Try it!
12 oz Package Fettuccine noodles
2 T Margarine
2 T Flour
1 1/2 c Skim milk
1/2 c Grated Parmesan cheese
1 T Lemon juice
1/8 tsp White pepper
1/8 tsp Salt
1 tsp Dried basil
1 T Parsley flakes
2 c Cooked chicken, diced
Cook fettuccine noodles according to package directions. Melt margarine in saucepan. Add flour. Whisk in milk and bring to a boil, stirring occasionally. Reduce heat to low. Add Parmesan cheese, lemon juice, pepper, salt, basil and parsley. Pour sauce over noodles, add chicken. Warm through. Add additional Parmesan cheese at the table, if desired.
Serves 6. Per approximate 1 1/3 c serving: 418 calories, 9 g fat, 3 g saturated fat, 46 mg cholesterol, 286 mg sodium, 54 g carbohydrate, 3 g fiber, 28 g protein.
