Manicotti

An Italian favorite to make at home!

8 Pieces  Manicotti

1 c  Fat- free cottage cheese

1 c  Light ricotta cheese

1 c  Shredded mozzarella cheese, divided

1 tsp  Dried basil

1  Egg

6 oz  Pasta sauce

Parmesan cheese

Prepare pasta according to package directions.  Meanwhile, combine cheeses, basil, and egg.  Pour 3 oz pasta sauce on bottom of microwave safe 8x8-inch baking dish.  Stuff Manicotti shells until plump.  Place in dish.  Top with remaining sauce.  Microwave 10-12 minutes or until warmed through.  Serve with Parmesan cheese, if desired.

Makes 8 pieces.  Per piece of Manicotti:  191 calories, 7 g fat, 4 g saturated fat, 47 mg cholesterol, 275 mg sodium, 17 g carbohydrate, 1 g fiber, 15 g protein.
