Mediterranean Halibut

This is a delicious recipe from the "Living Healthy with My Diabetes" program, sponsored by Cub Pharmacy

3/4 c  Chopped tomatoes

1/4 c  Reduced fat feta cheese

2 T Chopped basil, divided

1 T Capers, rinsed and drained

2 tsp Balsamic vinegar

1 lb Halibut fillets, rinsed

1 T  Extra virgin olive oil

2 tsp Minced garlic

In a small bowl, combine tomatoes, feta cheese, 1 T basil, capers and vinegar; set aside.  Pat fish dry with clean paper towels.  Preheat grill to medium heat.  Combine olive oil, garlic and remaining basil.  Rub both sides of fish with oil mixture.  Grill fish, turning once, until fish easily flakes with a fork or until an internal temperature of 145 degrees F is reached (about 10 minutes per inch of thickness).  Top grilled fish with tomatoes mixture.

Serves 4.  Per serving:  185 calories, 7 g fat, 2 g saturated fat, 40 mg cholesterol, 340 mg sodium, 3 g carbohydrate. 0 g fiber, 26 g protein.
