Oven-Fried Parmesan Chicken

This is a great way to have healthy fried chicken!

4 (4oz) Boneless, skinless chicken breast halves, flattened to uniform thickness

1 c  Plain non-fat yogurt

3/4 c  Plain bread crumbs

4 T  Parmesan cheese

2 T  Flour

1 tsp  Paprika

Pinch of cayenne pepper

Place chicken breast halves in yogurt and refrigerate.  Combine other ingredients in a mixing bowl.  Preheat oven to 425 degrees F.  Spray cookie sheet with nonstick spray.  Coat each piece of chicken well with yogurt and dip in crumb mixture, pressing down both sides and turning over several times to get a thick coat of crumbs.  Place chicken on cookie sheet, bake about 20 minutes or until internal temperature of 165 degrees F is reached. 

Serves 4.  Per serving:  280 calories, 6 g fat, 75 mg cholesterol, 420 mg sodium, 22 g carbohydrate, 1 g fiber, 34 g protein.
