Pecan Crusted Salmon These next weeks, I have a variety of seafood recipes for your holiday entertaining! 1/2 c Pecans 1/2 tsp Dried tarragon 1/2 tsp Dried basil 1 T Vegetable oil spread 4-5oz Salmon fillets Salt and pepper to taste Preheat oven to 350 degrees. Finely grind pecans with spices in a blender. Pour into a small bowl, stir in spread. Spray baking sheet with nonstick spray. Arrange salmon fillets on baking sheet; add salt and pepper to taste. Top each fillet with equal amounts of pecan mixture, spread evenly. Bake 20 minutes, or until flakey. Serves 4. Per serving: 365 calories, 26 g fat, 4 g saturated fat, 84 mg cholesterol, 118 mg sodium, 2 g carbohydrate, 1 g fiber, 29 g protein.
