Penne Rigate with Mixed Greens and Pine Nuts

A new pasta recipe you will love!

1  13.25 oz pkg Penne Rigate

3 T  Olive oil

1/3 c  Pine nuts

1 tsp  Chopped garlic

2-5oz  Bags or containers of Mixed greens and spinach

1/4 tsp  Salt

1/2 tsp  Black pepper

1/3 c Grated fresh Parmesan, plus extra for table use if desired

Cook penne according to package directions, drain.  In Dutch oven, combine olive oil and pine nuts over moderately high heat.  Cook about 3 minutes, until nuts are golden.  Add garlic, stir until golden, about 1 minute.  Stir in greens, cook, stirring until they wilt, about 3 minutes.  Add penne, salt and pepper and toss to coat.  Stir in cheese, serve immediately with extra Parmesan cheese on the side if desired.

Serves 6.  Per approximate 1  1/4 c serving:  365 calories, 13 g fat, 3 g saturated fat, 4 mg cholesterol, 3 g fiber, 12 g protein.
