Meals in Minutes- Soup/Vegetarian

Potato Soup

1 Medium onion, diced
4 1/2 c Potatoes, scrubbed and diced
1 T Margarine or butter
3 T Flour
4 c Skim milk
1 T Chicken granules
1/4 tsp White ground pepper
*Note-diced ham may be added, if desired.

Place onions and potatoes in a saucepan. Cover with water and bring to a boil. Simmer until tender, about 7 minutes. Drain. Meanwhile, melt margarine or butter in a large saucepan or Dutch oven. Add flour and milk, stir over low to medium heat until smooth and thickened. Add vegetables and spices to milk mixture. Warm through.
