Prawns and Pasta

This is so easy, but elegant!

8 oz Angel hair pasta

1 T Olive oil

12 oz pkg  Tail off, cooked frozen shrimp

1 14.5oz can  Diced tomatoes with basil, garlic and oregano, undrained

Parmesan cheese, if desired

Cook pasta according to package directions.  Heat olive oil in a medium saucepan over medium high heat.  Add shrimp, sauté until heated through.  Add the diced tomatoes, then the drained pasta.  Gently mix, heat through.  Serve with Parmesan cheese if desired.

Serves 4.  Per approximate 1 1/2 cup serving:  342 calories, 6 g fat, .5g saturated fat, 129 mg cholesterol, 575 mg sodium, 52 g carbohydrate, 2 g fiber, 26 g protein.
