Quick Chicken Fajitas

This one is "restaurant" good!

8  7-inch flour tortillas

12 oz   Boneless, skinless chicken breasts

1 T  Lime or lemon juice

1/2 tsp  Ground cumin

1/4 tsp  Dried oregano

1/4 c  Fat free or reduced fat Italian salad dressing

1 Small red and green pepper, cut into strips

1  Small onion, halved and sliced

 

Condiments:  Salsa, low fat sour cream, low fat shredded cheese and shredded lettuce. 

Thinly slice chicken into bite sized pieces.  In a bowl, combine lime or lemon juice, cumin and oregano.  Stir in chicken; set aside.  In a large skillet, heat the salad dressing over medium heat.  Add chicken mixture.  Stir fry for 2 minutes or until chicken is done.  With slotted spoon, remove chicken from skillet.  Add peppers and onions; stir fry for 2-3 minutes or until crisp tender.  Return chicken to skillet; heat through.  Spoon mixture onto warm tortillas; roll up.  Top with favorite condiments.

Makes 8 fajitas.  Per fajita (without condiments):  177 calories, 4 g fat, 1 g saturated fat, 25 mg cholesterol, 240 mg sodium, 23 g carbohydrate, 2 g fiber, 13 g protein.
