Rosemary Pork Chop and Apple Relish

Here's a great home cooked meal in minutes!

1 T Olive oil

4 Pork loin boneless pork chops (4oz each)

3/4 tsp  Dried rosemary

Fresh ground pepper to taste

3   Diced apples

1 1/2 tsp  Butter

1/4 c  Apple juice or cider

2 T  Teriyaki sauce

2 tsp  Brown sugar

2 tsp  Lemon juice

1/2 c  Raisins

2 tsp  Ground cinnamon

Heat a large skillet over medium-high heat; add olive oil, swirl to coat.  Season pork with pepper and rosemary.  Sear for 1 minute per side.  Lower heat to medium-low and cook 2-3 minutes per side, depending on the thickness of the chops.  Remove to a plate and cover to keep warm.  Wipe out skillet with paper towel and set heat to medium.  Add butter and diced apples; sauté for 1 minute.  Stir in teriyaki sauce, apple juice/cider, sugar, lemon juice, raisins, and cinnamon; simmer 2-3 minutes until apples are tender and liquid thickens.  Return chops to pan for a minute to heat through.

Serves 4.  Per serving:  346 calories, 13 g fat, 4 g saturated fat, 77 mg cholesterol, 586 mg sodium, 35 g carbohydrate, 3.5 g fiber, 25 g protein.
