Salmon BLT

Another recipe to use those tomatoes, and it is soooo good!

1 lb. Salmon fillets

1 T Salt free lemon pepper

8 Slices turkey bacon

8 Slices whole grain light bread, toasted

2 T+2 tsp Light mayonnaise

8 Slices tomato

Lettuce

Preheat grill or broiler.  Sprinkle lemon pepper on salmon.  Broil or grill until flakey, about 4 minutes per side.  Meanwhile, prepare turkey bacon in skillet or microwave until crisp.  Spread mayonnaise evenly on toasted bread.  Assemble sandwiches: 4 oz salmon, 2 slices bacon, 2 slices tomato and lettuce on each.  Cut in half.

Makes 4 sandwiches.  Per sandwich:  419 calories, 6 g fat, 2 g saturated fat, 84 mg cholesterol, 538 mg sodium, 29 g carbohydrate, 8 g fiber, 35 g protein.
