Salmon Burgers with Peach Salsa

A great new way to use those delicious fresh peaches!

2 Large peaches or 1 cup frozen peaches, diced

1 Medium Jalapeno pepper, cored, seeded and finely chopped (do not touch seeds with bare hands)

1 tsp Fresh lemon juice

1 1/2 tsp sugar

1/8 tsp Salt

2 T Fresh cilantro, chopped

14  3/4 oz Canned red salmon, drained, broken into small cubes

3 Green onions, finely chopped

2 1/2 tsp Lemon zest

1 Egg, beaten

1/4 tsp Black pepper

3 1/2 T Corn flake crumbs

 To prepare salsa, combine peaches, jalapeno and lemon juice in a medium bowl.  Add sugar and mix well.  Stir in salt and cilantro and toss gently to mix; set aside.  Preheat broiler or grill.  Spray broiler pan or grill with non-stick spray.  To prepare burgers, combine salmon, onions, lemon zest, egg, black pepper and corn flake crumbs in a  medium bowl; mix well.  Shape salmon mixture into four 1-inch thick patties.  Broil or grill for 3-5 minutes.  Flip burgers and cook about 3 minutes more, until golden brown on both sides.  Serve salmon burgers with peach salsa on the side.

Serves 4.  Per serving includes about 1/2 c salsa:  213 calories, 8 g fat, 2 g saturated fat, 111 mg cholesterol, 719 mg sodium, 12 g carbohydrate, 1 g fiber, 23 g protein
