Shrimp and Snow Peas in Orange Sauce

Happy New Year!  Here is a great new recipe to get you started on the right foot!

4  Scallions, thinly sliced

1 T  Peeled, minced fresh ginger

1 T  Finely grated orange zest

2  Garlic cloves, minced, or 2 1/2 tsp minced garlic

3 c  Snow peas

16 oz  Pkg cooked tail off shrimp

3 c  Bean sprouts

1/2 c  Orange juice (fresh squeezed preferred)

2 T  Low sodium soy sauce

1 1/2 tsp  Honey

1 1/2 tsp  Cornstarch

1 1/2 T Rice vinegar

Coat a large nonstick wok or sauté pan with cooking spray.  Heat pan over high heat to smoking.  Add scallions, ginger, orange zest and garlic, stir-fry for 30 seconds.  Add snow peas.  Continue tossing until crisp tender, about 2 minutes.  Add shrimp, continue tossing about 2 minutes.  Add sprouts, orange juice, soy sauce, and honey.  Toss until bubbling, about 1 minute.  Whisk cornstarch with rice vinegar in a small bowl.  Add to other ingredients, continu7e cooking until sauce has thickened, about 30 seconds.

Serves 4.  Per 1 1/2 cup serving:  187 calories, 2 g fat, 0 g saturated fat, 172 mg cholesterol, 476 mg sodium, 14 g carbohydrate, 2 g fiber, 26 g protein.
