Skillet Salmon with Dill Cream Sauce

This is a great way to make salmon on the stove top!

1 T Canola oil

1 lb Salmon, cut into 4 fillets, rinsed and patted dry

3/4 c Skim milk

4 oz Reduced fat cream cheese

1/2 c Chopped cucumber

2 T Chopped fresh dill or 1 tsp dried dill

1/4 tsp Sea salt

1/4 tsp Pepper

In a large skillet, heat the oil over medium high heat.  Add salmon, flesh side down and cook 5 minutes.  Turn and cook another 3-5 minutes, or until salmon is cooked through.  (Internal temp should be at least 145 degrees).  Remove from skillet, cover to keep warm.  Add the milk and cream cheese to the skillet; cook and stir until smooth.  Stir in cucumber, dill, salt and pepper.  Cook about 2 minutes or until heated through.  Serve salmon topped with cream sauce.

Serves 4.  Per serving:  324 calories, 21 g fat, 6 g saturated fat, 84 mg cholesterol, 321 mg sodium, 5 g carbohydrate, .5 g fiber, 27 g protein.
