Stir-fry with Bok Choy, Shiitake Mushrooms and Snow Peas

This is a great stir fry with some unique vegetables

2 T  Olive oil, divided

14 oz  Package chicken breast, cut into strips

2 T Teriyaki marinade or sauce, divided

3.5 oz  Package fresh shiitake mushrooms, stems discarded and caps quartered

3/4 lb  Bok choy, cut into 2 inch thick pieces

1 c  Snow peas

1 T  Finely chopped garlic

Heat 1 T oil in a large non-stick skillet over moderately high heat.  Add chicken strips, stir-fry until no longer pink-about 6 minutes.  Add 1 T teriyaki sauce when almost done.  Remove from pan, keep warm.  Add 1/2 T oil to pan.  Add mushrooms, sauté about 4 minutes.  Add to chicken.  Use remaining 1/2 T oil to stir fry bok choy, snow peas and garlic, until crisp tender-about 4 minutes.  Add remaining teriyaki sauce.  Pour chicken and mushrooms back into skillet.  Combine all ingredients.  Serve over rice, if desired.

Serves 4.  Per approximate 1  1/2 cup serving:  203 calories, 9 g fat, 1 g saturated fat, 58 mg cholesterol, 427 mg sodium, 5 g carbohydrate, 2 g fiber, 26 g protein.
