Tuna Steak with Pineapple and Tomato Salsa

Haven't tried fresh tuna?  Here's a great recipe to start with!

1 Medium tomato, chopped

1 can (8oz) Pineapple tidbits in juice, drained

1 Jalapeno pepper, seeded and minced (if desired)

2 T Chopped fresh cilantro

1 T Minced red onion

1/2 tsp Grated lime zest

2 tsp Lime juice

4 Tuna steaks (4oz each)

1/2 tsp Salt

1/8 tsp Black pepper

2 tsp Olive oil

To make salsa, combine tomato, pineapple, jalapeno, cilantro, lime zest, and lime juice in medium bowl.  Sprinkle tuna with salt and pepper.  Heat oil in large nonstick skillet over medium high heat.  Add tuna and cook 2-3 minutes on each side, or until meat thermometer reaches 145 degrees F.  Serve with salsa.

Serves 4.  Per serving (1 steak with scant 1/2 c salsa):  228 calories, 8 g fat, 2 g saturated fat, 43 mg cholesterol, 338 mg sodium, 11 g carbohydrate, 1 g fiber.
